Slow-Cooker Chicken Parmesan Meatballs

What if you can have meatballs without the pasta? This recipe is going to make your kids want to keep eating healthy. It’s a great dinner choice for picky eaters plus, it can be enjoyed by everyone in the family. 

Ingredients:

For the sauce:

  • ½ grated medium onion, 
  • ½ tsp dried basil 
  • ¼ teaspoon salt 
  • 2 minced garlic cloves 
  • 1 can no salt added crushed tomatoes 
  • ½ tsp dried oregano 

For the Meatballs: 

  • 1 lightly beaten large egg 
  • ½ cup grated parmesan cheese 
  • ½ cup whole wheat bread crumbs 
  • 1 pound ground chicken 
  • ½ teaspoon garlic powder 
  • 30 pear size fresh mozzarella balls 
  • ½ tsp dried basil 
  • ½ dried oregano 
  • ¼ tsp salt 

Cooking Procedure:  

  • First, prepare the sauce. In a slow cooker, combine the oregano, basil, onion, tomatoes, garlic, and salt. 
  • To prepare the meatballs, combine the ground chicken, parmesan, egg, basil, oregano, garlic powder, salt, and breadcrumbs in a bowl. Get 1 tablespoon of the meat into a disk and place the ball or mozzarella in the center. Wrap the meat around the cheese to form a ball. Do the same with all the others and once done add them to the slow cooker. Cook everything for 3 hours on high and 6 hours for low temperature.
