Crispy Lemon Baked Chicken Thighs

Chicken always tastes good no matter what way you cook it. This Crispy Lemon Baked Chicken Thighs recipe is designed to give you the most flavorful and tender chicken thighs you can ever eat. If you are on a keto diet, this will also make a great dinner that you and your family can enjoy. Add your own side dishes and have a delicious guilt free meal. 

Ingredients:

  • 3 tbsp finely chopped fresh oregano 
  • 2 tsp salt
  • 2 tsp finely chopped thyme 
  • ½ tsp ground black pepper 
  • 4 tbsp of olive oil 
  • 4 tbsp lemon juice 
  • 3 lbs chicken thighs (make sure to keep the bones and skin in tact) 
  • 2 tbsp vinegar 
  • 2 minced garlic cloves 

Crispy Lemon Baked Chicken Thighs Cooking Procedure

  • In a large mixing bowl combine and marinate the ingredients. Add the chicken thighs into the bowl or a ziplock bag and coat thoroughly. 
  • Place marinated chicken inside the fridge and leave it for at least 3 hours. Remember to turn each side of the chicken after each hour if you can. 
  • Put some parchment paper in two regular baking trays and Pre-heat your oven to 400°F/200°C. 
  • Remove the chicken thighs from the marinade and place them skin side up on one of the trays prepared and cook the chicken thighs in over for 35 minutes. Once you see that the skin is already golden brown take it out of the oven and let it sit for 10 minutes before you serve it. 

Useful Tips: 

You can prepare this Crispy Lemon Baked Chicken Thighs dish early in the morning so you can cook it in the evening. To add a bit more of a tangy flavor to your chicken, you can add some more lemon slices to the baking tray. Serve this dish with your favorite side dishes, it could be a salad, some mashed cauliflower or something else that you think will fit well with the chicken.
