  • In a frying pan, crack open the eggs and fry it for 2 minutes. Make sure to cook it scrambled. Or If you want it to make poached egg, bring a pan of water filled to a simmer and stir the water to create a gentle whirlpool to help the egg white wrap around the yolk. 
  • Once the egg is ready set them aside and cook the sausages. 
  • Place the eggs on the tortillas along with the cheese, baby spinach, and sausage and cook in the oven until the tortillas are soft and firm enough to roll. 
  • Serve while hot.
