Garlic Chicken and Potatoes

Classic chicken with potatoes with a twist is always the best way to get your kids to eat what you have served. This simple recipe will make a great dish for dinner and not only your kids will enjoy it but even you. 

Ingredients:

  • 1 lemon juiced 
  • Red pepper flakes 
  • 2 tbsp chopped fresh parsley and cilantro 
  • 2 pounds small red skinned potatoes 
  • 2 tbsp extra virgin olive oil 
  • ½ tsp cumin seeds – optional
  • Kosher salt 
  • Freshly ground pepper 
  • 4 finely chopped garlic cloves 
  • 4 skinless and boneless chicken 
  • 2 tbsp packed light brown sugar

Cooking Procedure: 

  • First, pre heat your oven to 435 degrees F and position the rack in the lower third of your oven. Put in the potatoes with olive oil, cumin seeds and ¾ tsp salt and pepper to taste. Spread evenly in a baking dish and roast the potatoes for 30 minutes until they are fully roasted and brown. 
  • In a small skillet, heat up the oil over medium heat and add the garlic then let it cook until it starts to become fragrant. Remove the hit and stir in the brown sugar, red pepper flakes, and lemon juice. Remove the dish in the oven and position the chicken breasts in the middle. Season the chicken first with salt and then add in the garlic mixture. Return it in the oven and then let it cook for 20 minutes until both the potatoes and chicken are fully cooked. 
  • Once done, remove it from the oven and then transfer the chicken to a cutting board and slice it into strips. Add the cilantro into the baking dish and mix in the potatoes. Serve the chicken with the potatoes and the lemon wedge.
