This winter vegetable pie recipe may be one of the healthiest pie out there with its healthy and beneficial ingredients plus the low calories per serving.

Pies are a popular comfort food, although they are rarely heart-healthy. But even heart disease people can enjoy them with a few changes and maybe this healthy recipe is what you’ve been waiting and craving for. This will surely suffice as a low calorie dinner.

This is an easy to make vegetable pie recipe that can be made within 1 hour. The prepping time may take up to 15 minutes and the cooking time is approximately 45 minutes. The ingredients listed below can serve up to 4 persons.

Ingredients:

  • 2 tbsp olive oi
  • 2 onions, sliced
  • 1 tbsp flour
  • 300 g (about 2 large) carrot, cut into small batons
  • ½ cauliflower, broken into small florets
  • 4 garlic cloves, finely sliced
  • 1 rosemary sprig, leaves finely chopped
  • 400 g can chopped tomato
  • 200 g frozen pea
  • 900 g potato, cut into chunks
  • up to 200ml/7fl oz milk

Cooking Procedure:

  1. In a flameproof dish, heat 1 tbsp of the oil over medium heat.
  2. Add the onions and cook until softened for 10 minutes, then blend in the flour and start cooking for another 2 minutes. Add the carrots, cauliflower, garlic and rosemary, and cook for 5 minutes, stirring regularly until they start to soften.
  3. Tip the tomatoes with a can full of water into the vegetables. Cover with a lid and cook 10 minutes, and then remove the lid and cook it for about 10 to 15 minutes more until the sauce has thickened and vegetables are cooked.
  4. In the meantime, simmer the potatoes until tender for 10-15 mins. Drain, then put back and mash in the saucepan. Stir up enough milk to achieve a relatively soft consistency, then put the remaining olive oil and season.
  5. Heat out the grill. Spoon the hot vegetable mix into a pie dish, cover it with the mash and gently drag a fork over the surface. Place a few minutes under the grill until the top is golden brown and crisp.
  6. Serve, dig in and enjoy!
