Welsh Rarebit Muffin

These Welsh rarebit muffins make a filling breakfast which is suitable to both adults and kids. This muffin recipe can help you with your low calorie diet while enjoying your breakfast with kids. 

This dish is best made with a great sharp and heavy cheddar since anything else is relatively mild in taste. Classic Welsh rarebit is made with very sharp cheddar cheese, so it’s traditional. A high-fiber, low-fat option with calcium, phosphorus, magnesium and selenium, English muffins make a great weight loss breakfast food.

This is an easy to make breakfast recipe with 40 minutes total preparation time. 15 minutes for ingredients prepping and 25 minutes cooking time. This can serve about 12.

Ingredients:

  • 225g self-raising flour
  • 50g plain flour
  • 1 tsp baking powder
  • ½ level tsp bicarbonate of soda
  • ¼ tsp salt
  • ½ level tsp mustard powder
  • 100g strong cheese, half grated, half cubed
  • 6 tbsp vegetable oil
  • 150g Greek yogurt
  • 125ml milk
  • 1 egg
  • 1 tbsp Worcestershire sauce

Cooking Procedure:

  1. Heat oven to 200C/fan 180C/gas 6.
  2. In a bowl, combine together the self-raising flour, baking powder, bicarbonate of soda, salt and mustard powder.
  3. Mix the cheese, oil, yogurt, milk, egg and Worcestershire sauce in a separate bowl.
  4. In a muffin tin, combine all the ingredients and divide between the muffin cases.
  5. Place in the oven for 20-25 minutes until golden.
  6. You might need to ask the kids to help you get all ready, weigh scales, measuring jug, fork, 2 mixing bowls, 12 muffin cases, muffin tin, cheese grater, sharp knife, tablespoon, cooling rack.
  7. Serve and enjoy every bite!
