Mixing veggies with a healthy mix of meat is a great way to get your kids to like greens. This simple recipe is a healthy balance between meat and vegetables. Your kids will love it plus, its healthy and includes many healthy ingredients to keep them healthy.
Ingredients:
- 1 pound boneless and skinless chicken breasts
- 1 ½ cups skim milk
- 8 ounces whole wheat egg noodles
- 1 can reduced sodium chicken broth
- ¼ tsp salt
- 1 ½ cups shredded cheddar cheese or colby jack
- ¼ tsp freshly ground pepper
- 3 tbsp all purpose flour
- ½ cup reduced fat mayo
- 1 ½ tsp dry mustard
- ½ tsp garlic powder
- 1 14 to 16 ounce frozen broccoli
Cooking Procedure:
- In a large skillet, place all the noodles and pour the broth over it. Layer the broccoli over the noodles along with the chicken. In a bowl, whisk together the flour, dry mustard, garlic powder, salt, pepper, milk, and mayo and pour it over the prepared broccoli
- Bring it to a simmer over some medium high heat and then reduce the heat after a while to maintain the simmer. Stir it a bit and let it cook for 18 minutes until all the noodles and chicken are cooked thoroughly.
- When it’s done, sprinkle the cheese on top of it and let it broil again for 3 minutes until it turns golden brown.
