Quesadillas are a family favorite. In fact, kids enjoy this dish too much but what if you can prepare it at home for everyone to enjoy? This simple chicken quesadilla recipe will make you want to keep preparing it for lunch or dinner on a regular basis. It’s easy to make and not time consuming. Plus, it’s healthy and will fight right into your diet plan.
Ingredients:
- 1 chopped spring onion
- 85g grated mature cheddar
- Oil for brushing
- 2 large plain or seeded flour tortillas
- 4 tbsp hot salsa from a jar
- 215g kidney beans can be roughly mashed or drained
- 50g left over shredded roast chicken.
Cooking Procedure:
- On each tortilla, spread the salsa and evenly top it with the chicken, cheddar, beans, and spring onion. You can also scatter using a coriander if you have one. After it’s evenly placed, sandwich the tortilla and then brush it with oil.
- In a large non stick pan, put the heat on low and cook the tortilla oil side down for about 4 minutes. Carefully turn over the tortilla to the other side then cook it for another 2 minutes. Once it’s golden brown, serve while hot.
