Craving for some satay? This recipe makes a great snack and a main course all at the same time. It’s easy to prepare and does not require too much skill. It’s healthy and can be enjoyed by everyone in your family, including your kids.
Ingredients:
- 2 tsp lime juice
- 10 cm cucumber cut into strips
- Sweet chili sauce
- 1 finely grated garlic clove
- 1 tsp madras curry powder
- Soy sauce
- 2 tbsp of sugar free peanut butter or one without palm oil
- 2 skinless, chicken breast fillets cut into strips
Cooking Procedure:
- First, set your oven to 200C/ 180C fan/ and put 4 non stick papers on your baking tray.
- In a bowl, mix in the 2 tbsp of chunky peanut better with the 1 tsp madras curry, garlic, lime juice and just a little bit of soy sauce. Take note that there are some peanut butters that are a bit thick compared to others, so you can add some boiling water to the mix to get a consistency for the coating.
- Add the chicken fillets into the mixture and mix everything until the chicken is fully coated. Arrange the chicken on the pans inside the oven and bake it for about 10 minutes until it’s golden brown.
- Serve it warm with the cucumber strips and the chili sauce
