Spaghetti & Meatball Skillet Supper

Spaghetti is better enjoyed with tasty meatballs added into them. In this recipe, we mix a traditional favorite with a healthy new twist. Your family members will drool over this dish, and even better you can have it any time you want because it’s simple to prepare and doesn’t eat up too much of your time. 

Ingredients: 

  • 1 tbsp olive oil 
  • 1 can of undrained whole tomatoes broken up 
  • 1 can water packed artichoke hearts drained 
  • ½ tsp italian seasoning 
  • 12 ounces frozen fully cooked italian turkey meatballs 
  • ¼ cup chopped fresh parsley 
  • 1tbsp lemon juice 
  • Grated parmesan cheese 
  • 1 can reduced sodium chicken broth 
  • 1 can  rinsed and drained cannellini beans

Cooking Procedure: 

  • In a large skillet, heat up the oil on medium heat then add the meatballs. Cook them all until they reach a slightly browned color. 
  • Add in the tomatoes, italian seasoning, broth, and artichoke hearts and then bring it to a boil. After a while, add in the spaghetti and return to boiling. Reduce the heat and simmer everything covered until the spaghetti is soft and tender. Let it cook for 12 minutes with occasional stirring. 
  • Add in the lemon juice and the parsley. Once it’s done, serve with the cheese.
