Low Carb Cauliflower Fried Rice

Why would you settle for take out when you can just cook the food yourself and make it the way you want? This low carb cauliflower fried rice recipe is healthy, tasty, and super easy to prepare. Even better, it can make a great substitute to real rice. If you are on a keto diet, this recipe will for sure fill you right up which is a win win for you. 

Ingredients: 

  • 1 head of cauliflower 
  • 1 bunch of thinly sliced scallions 
  • 2 carrots diced and peeled 
  • 1 tbsp minced fresh ginger 
  • 3 cloves of minced garlic 
  • 1 diced red bell pepper 
  • 2 stocks of diced celery 
  • 1 cup of frozen peas 
  • 2 tsps sriracha or maybe more depending on your taste 
  • 3 tbsp of soy sauce 
  • 2 tbsp of neutral oil or if you want you can also use coconut, peanut, or vegetable oil 
  • 4 eggs 
  • 4 tbsp sesame seeds 
  • 4 tbsp fresh chopped cilantro 
  • Salt 
  • Pepper 
  • 2 tbsp rice vinegar 

How to make low carb cauliflower rice

  • To make the rice, you will need a food processor. In the bowl, pulse the cauliflower until it’s close to the texture of rice. Mix it in the processor for 2 to 3 minutes and then set it aside. 
  • Heat up the oil over medium heat in a large skillet. Add the ginger, garlic, and scallions. Mix everything for 1 minute until aromatic. 
  • Add the red bell peppers, carrots, celery, and mix everything for 10 minutes until all the vegetables are tender.
  • Add the cooked cauliflower rice to the vegetables and cook for 3 to 5 minutes until it turns golden brown. Add in the frozen peas and combine everything thoroughly.
  • After it’s mixed add in the sriracha, soy sauce and rice vinegar to combine and then set it aside. 

Useful Tips: 

To add a garnish to your low carb cauliflower rice, you can cook the eggs in a separate skillet and put it on top of the rice you prepared.
