Nothing like a healthy salad to replenish your child’s mood! This is also the perfect way for you to get them used to the idea of eating veggies at an early age. This simple caesar salad will make them enjoy veggies with their food.
Ingredients:
- Kosher salt
- 1 fresh lemon juice
- 1 cup shredded parmesan cheese
- 1 small garlic clove
- 4 cups cubed day old crusty bread
- 2 anchovy fillets
- 1 tsp dijon mustard
- 1 pound skinless boneless chicken breasts
- 2 romaine lettuce hearts
- Pepper
- 2 tbsp extra virgin olive oil
- ½ cup nonfat plain greek yogurt
Cooking Procedure:
- To make the croutons, you must first pre heat your oven to 350 degrees F. place the bread cubes in a bowl with olive oil. Put them in a baking sheet, and bake them for 20 minutes until they are golden brown.
- To make the dressing, puree the yogurt then add in the parmesan, lemon juice, anchovies, garlic, and mustard with 2 tbsp of water in a mini food processor or a blender. Pound the chicken in between two pieces of plastic wrap with a mallet or anything hard until they are at least ½ inches thick.
- Brush the remaining olive oil on a rimmed baking sheet and add the chicken. Make sure to season it with salt and pepper. Brush it evenly with the dressing and put in the parmesan. Let it broil for about 5 minutes until it’s golden brown. Transfer the chicken to a cutting board and toss the lettuce, remaining dressing, parmesan and the croutons in a large bowl. Then thinly slice the chicken and topp it on the salad.
