Nutty Bars

Brownies are always a guilty pleasure for anyone, but what if it’s gluten and cholesterol free? This simple recipe is great for your kids and if you’re trying to put them on a diet, this will give them the perfect balance between healthy and yummy! 

Ingredients: 

  • 2 tbsp honey 
  • 1 tsp baking powder 
  • ¼ tsp baking soda 
  • ⅓ cup strawberry jam 
  • ½ tsp salt 
  • 2 tsp pure vanilla extract 
  • ½ cup creamy peanut butter 
  • ½ cup roasted unsalted peanuts, almonds or wallnuts
  • 15 oz low sodium rinsed chickpeas
  • ⅔ cup old fashioned rolled oats 

Cooking Procedure: 

  • First, heat up your oven to 350°F. After heating up the oven, prepare 8 square baking pans with parchment. Make sure to leave at least two sides of the overhang. 
  • Using a food processor, mix in the honey, vanilla, and chickpeas until the texture becomes smooth. After it’s smoothened, make sure to put in the peanut butter and scrape the sides as necessary. 
  • Using a small bowl, mix together the baking powder, oats, peanuts, baking soda, and salt. Add it into the food processor and pulse it a few times until everything is mixed together. Make sure to leave it a bit chunky, not too smooth. Transfer 1 cup of the dough into a bowl and let it sit for a few minutes. 
  • Press in the remaining dough evenly into one of your prepared pans. Gently spread the jam on top, then crumble the remaining dough you have left over the jam. Bake it in the oven until the edges pull away from the pan. Cook it for about 30 minutes until its light golden brown. 
  • Once you take it out of the oven, let it sit for 15 minutes then transfer it to a rack to let it cool completely. Serve it to your kids with whipped cream if you like.
