Cod with Cucumber, Avocado and Mango Salsa Salad

The total preparation time of this dish is 15 minutes, 5 minutes for prepping all the ingredients and 10 minutes of cooking time. It can serve up to two persons.

Ingredients:

  • 2 x 125g skinless cod fillets
  • 1 lime, zested and juiced
  • 1 small mango, peeled, stoned and chopped (or 2 peaches, stoned and chopped)
  • 1 small avocado, stoned, peeled and sliced
  • ¼ cucumber, chopped
  • 160g cherry tomatoes, quartered
  • 1 red chili, deseeded and chopped
  • 2 spring onions, sliced
  • handful chopped coriander

Cooking Procedure:

  1. Heat oven up to 200C/180C fan / gas 6. 
  2. Place the fish in a shallow ovenproof frying pan and pour over half the lime juice with a little zest, and after that grind over some black pepper. Bake for 8 minutes or until the fish flakes easily but still moist.
  3. In the meantime, place the remaining ingredients, plus the remaining lime juice and zest, in a bowl and mix well. Spoon over the plates and place with the cod, spoon over any juice in the dish.
  4. Garnish with the leafy veggies then serve and enjoy!
