Ingredients:
- 1 ½ cups of rotisserie chicken
- 2 red and 1 green tomatoes
- 12 slices bacon
- 3 avocados
- 1 cup lettuce that are finely chopped
- ½ cups cottage cheese
How to cook Chicken salad avocado
- Preheat the oven to 400 degrees and then put the 12 slices of bacon inside. Make sure to wrap it in foil first.
- Bake the bacon for 10 minutes and then flip to the other side and cook for another 5 minutes. Take it out of the oven, put it on some paper towels and let it cool.
- Chop all the tomatoes and take out all the pulp. Chop all the romaine lettuce also into smaller pieces.
- Combine the chicken, tomatoes, crumbled bacon, romaine and cottage cheese in a large bowl and mix everything together.
- Season with salt and pepper until it fits your liking. Slice the avocados in half and take out the seed.
- To arrange the salad, Scoop the mixture of chicken, tomatoes, crumbled bacon, romaine and cottage cheese then fill it inside the avocado pit.
