Chicken breasts are a kids favorite! Mix it up with some yummy veggies, and your kids will want to keep eating it! This simple recipe is covered in healthy bread crumbs and sided with some coleslaw!
Ingredients:
- 1 large beaten egg
- 2 tbsp grated parmesan
- 75 ml vegetable oil
- 100 g flour
- 4 small chicken breasts
- 75g dried breadcrumbs
- 300 g white shredded cabbage
- 150 g pot natural yogurt
- 1 red skinned grated apple
- ½ lemon juice
- 2 tsp english mustard
- 1 large peeled and grated carrot
- 6 spring onions diagonally sliced
Cooking Procedure:
- You can ask your child to help you prepare. Ask them to mix all the coleslaw ingredients together in a large bowl. Season it a little then leave it for later.
- Place the chicken fillets on top of a cling film in your work area then cover it with another layer of cling film. Use a rolling pin to stretch and tenderize the chicken until it is 3 mm thick. You can ask your kids to do this for you as well.
- On a plate, put the flour and season it. In a bowl put the egg, then ask your kids to dip the chicken in the flour and then dip it in the egg mixture.
- In a bowl, mix together the crumbs and the parmesan then toss the chicken in the mixture. Make sure that the chicken is completely covered, then put them in the fridge until you’re ready to cook them.
- If you decide you want to cook it right away, you can heat up some oil in a large frying pan then cook the chicken two at a time for about 3 minutes each until they reach golden brown. Serve the chicken with the coleslaw after.
