Ingredients:
- 1 lb ground chicken
- 3 tbsp hoisin sauce
- 2 tbsp low sodium soy sauce
- 1 tsp sesame oil
- 1 diced medium onion
- 2 minced garlic cloves
- 1 tbsp freshly grated ginger
- 2 tbsp rice wine vinegar
- 1 tbsp sriracha
- 1 tbsp extra virgin olive oil
- 2 thinly sliced green onion
- Kosher salt
- Freshly ground black pepper
- ½ c water chestnuts dried and drained
- Large leafy lettuce or rice for serving
Cooking Procedure:
- First make the sauce. Using a small bowl, whisk together the soy sauce sriracha, sesame oil, hoisin sauce and rice wine vinegar.
- In a large skillet, heat up the olive oil over medium high heat then add the onions and cook for 5 minutes until the onions are soft. Add in the garlic and the ginger and cook for 1 minute until it’s fragrant. Add in the ground chicken and cook it until it turns opaque. Make sure to break up the meat evenly with a wooden spoon.
- Pour in the sauce into the skillet and cook it for 2 minutes until the sauce is reduced slightly and the chicken is completely cooked. Turn off the heat and add in the green onions and the chestnuts. Season it with pepper and salt.
- Put the chicken mixture into the center of the leafy lettuce and serve it immediately. You can also add some rice if you want.
