Eggs are a great dish to serve for your kids. It’s packed with protein and healthy vitamins to keep your kids active. This simple recipe has a healthy twist to it that your kids will definitely enjoy. It’s easy to prepare!
Ingredients:
- 4 smoked bacon
- 8 eggs
- 2 tomatoes
- 3 spring onions
- 2 tbsp sunflower oil
- 200g potatoes
- 1 tsp mustard
- 85g cheddar cheese
Cooking Procedure:
- On a chopping board, finely chop the spring onions and set them aside. Also chop the potatoes into thick cuts, but no need to peel them anymore. Put all the potatoes in some boiling lightly salted water for 10 mins until they are soft and tender, then drain out the water.
- Cut the bacon with some scissors into small pieces then heat the frying pan with 1tsp of oil. Place the bacon in the pan and stir fry it for a few minutes until it turns golden brown or pink. Add in the spring onions and cook until it becomes soft. Set aside the onion and the bacon.
- In a bowl, mix in the eggs then add the salt, pepper and the mustard. Add the cheese into the egg mixture and also the cooked bacon, potatoes, and spring onion. Stir everything together until they are coated evenly. Heat up the 2 tbsp of oil in a clean pan and pour in the egg mixture.
- Leave the eggs to cook for about 6 minutes on low heat. Cut the tomatoes into wedges and sprinkle it over the omelette along with the left over cheese. Once the egg is already done cooking, let it cool down for 5 mins then cut it into wedges. You can serve these eggs with toast, tea, ketchup or orange juice if you like.
