Who says you can’t enjoy a burrito in the morning? This popular mexican favorite is made with a little breakfast twist that you can enjoy. It’s delicious, healthy, and does not require much time and effort to prepare.
Ingredients:
- 1 egg
- 50g kale
- 7 halved cherry tomatoes
- ½ small sliced avocado
- 1 tsp rapeseed oil
- 1 tsp chipotle paste
- 1 wholemeal warm tortilla wrap
Cooking Procedure:
- In a jug or a bowl (whichever you prefer), whisk the egg with the chipotle paste and some seasoning together thoroughly. Using a large pan, heat up the oil and add the tomatoes and the kale.
- Cook both thoroughly until you see that the kale is wilted and the tomatoes have softened in texture. Set those aside for a while and pour in the eggs you whisked into the frying pan. Make sure to cook the egg scrambled and then layer all the ingredients into your warm tortilla wrap. Top the wrap with some avocado and serve.
